CURRY PASTE

We got some questions about the curry paste called for in the CARROT SOUP recipe.

If you are going for store bought, we like the Thai Curry paste made by Asian Creation.

Here’s a recipe for an easy homemade one inspired by one of my favorite food artists, Australian Donna Hay.

To keep things simple, I attach few quantities to the ingredient list, but rather encourage you to put ingredients in your hand and let spices fill the bottom of your palm. This way, we keep measuring spoons etc. out of it and you get to feel your food! This will make enough curry paste for the soup recipe.
You are invited to use organic, non-irradiated spices whenever possible.

ground turmeric
ground ginger
ground cumin
ground coriander
chili flakes
tomato paste
a shot of balsamic vinegar
5 shallots chopped
4 cloves of garlic, crushed
2 sprigs of cilantro or parsley, chopped

Put all the ingredients in a food processor or mortar and pestle and mix until smooth(ish!)
